Nothing can beat the copper pots and pans set for cooking due to it being able to heat evenly. An even heat will help to avoid food sticking to the hottest areas of the pan. This is especially useful when cooking those delicate dishes that are notorious for burning.
The tinned interior versions of these cooking vessels have almost been phased out, being replaced with stainless steel. The tin coating certainly did a great job but is prone to damage. Careless use of metal utensils and using scourers would wear the coating away. At one time these could be re-tinned but finding someone today that carries this procedure out is rare.
Stainless steel on the other hand is much harder and will take a lot more punishment. This is great news especially if you have spent a lot of money on them.
The thickness of the copper used in the manufacture is an important factor. 2 mm and above is recommended although not all brands provide this information. In general these thicker gauges are more expensive as you would expect. So I would only recommend spending serious money on something you liked if the thickness was clearly stated.

Induction must have metal that is magnetic for it to work. So this company has cleverly included stainless steel and copper in the bottoms to overcome the problem. They don’t have the warmth of the rich red color but may be an option for some folk.
